Pumpkin Scones

Monday morning cooking was quick and easy this morning. Pumpkin scones with pumpkin prepared yesterday.

I plan to wrap and freeze one scone to see how they go. They have never lasted long enough to actually try freezing them! But I would like to know as I could then make a double batch and freeze half for the next week.

Pumpkin Scones

1tbs butter
1/2 cup sugar
1/4 tsp salt
1 egg
1 cup mashed pumpkin (cold)
1cup grated cheese
2-2 1/2 cups sr flour

beat butter sugar and salt, add egg, then pumpkin & cheese. Stir in by hand sifted flour. Put on floured board and cut cook in very hot over (225-250c) for 15-20 minutes until cooked.
