Muesli Bars

Sunday cooking for some of the weeks snacks included doing Muesli Bars, and also cooking the pumpkin that will be used tomorrow to make Pumpkin Scones.

Muesli Bars

6 Crushed Weet Bix
2 cups rice bubbles
1 cup oats
1 tin skim condensed milk
Dried Fruit, choc chips etc. ( I use 1/2 cup choc chips & 1 cup sultanas)

Mix all the cereals and fruit in a large bowl. Add the condensed milk and stir until mixed through.
Press into greased tin (I line one with baking paper) bake for 15mins at 180 degrees. (I do them for 12mins for a chewy bar or 15 for a bit crunchier.. but not longer)

I adapt this recipe to suit whatever I have on hand. Today I used 1 cup of rice bubbles and 1 cup of crushed wholegrain cornflakes.

As soon as I remove it from the oven I use the end of an egg flip to cut into bars, then I slide the whole lot on the baking paper to the cooling rack. It makes approx 21 bars. I have not tried to freeze them as they don’t tend to last more than a week in this house anyway. I store them in an airtight container in the fridge.

The cost works out to approx 15c a bar, which would be $1.20 for a box of 8… way cheaper than even home brand muesli bars, and apparently a lot nicer. The teenager wont even eat shop bought ones!
