Apple Scrolls

This is another from the archives and a favourite in our house. When visiting friends, if I asked what I could bring, I would often be asked for these. There is nothing quite like a fresh scroll, so I would often do all the steps up to popping them into the tins, and then transport them to the friend’s place like that. I would always check it was ok to use their oven when I got there. The trip in the car was a great time for the second rise.  

These can easily be made without the apple, or you could substitute with another similar fruit, such as pear. I have also topped with crushed walnuts or dusted with cinnamon after glazing. Experiment a little and see what you can come up with.

These are a blending of cinnamon scrolls and apple scrolls.

Ingredients

  • Water - Dough

  • Marg or Butter - Dough

  • Egg - Dough

  • Salt - Dough

  • Sugar - Dough

  • Plain Flour - Dough

  • Yeast - Dough

  • Sultanas - Dough

  • Green Apples - Filling

  • Dark Brown Sugar - Filling

  • Marg - Filling

  • Cinnamon

Directions

  • Place all dough ingredients into bread maker, except sultanas, if you have a fruit/nut dispenser in yours they go in there, if not they can be kneaded in later.

  • Set your bread maker to the Dough setting and move on to the filling. 

  • Peel and dice apple finely.

  • Mix apple with the remainder of the filling ingredients, microwave on high for approx 30 seconds. Just long enough to melt the ingredients and slightly cook the apples. 

  • When dough is finished in the breadmaker, Roll onto a board into a rectangle shape, about 30 cm x 20cm. Spread the filling on and roll up, starting at the shorter side. Cut them into approx 2cm slices and place in tins ( I used one square & one circle). Cover and put somewhere warm to rise for about 1 hour, or until doubled.

  • Cook on 180 for 20mins or until brown.
    Once out of the oven drizzle with runny icing mixture.
