Pizza Pockets

Ok, so Master15 loves pizza pockets as a quick snack. However at $4.89 (on special) for a packet of 4 I don’t ‘love’ buying them, so I set in search of a way to make them. With a simple pizza dough recipe I was able to make approx 12 of them for around the same price as a pack of 4.

Pizza Dough

1/3 cup warm milk
2/3 cup warm water
1 tsp sugar
I table spoon dried yeast ( I packet)
2 cups flour
1/2 teaspoon of salt
1 tblspn oil

combined the milk, water, yeast and sugar and left it for about 15 minutes to go frothy.

then combine this with the remaining ingredients, mix into a ball pop into an oiled bowl (or can be left in the same bowl), cover and leave in a warm place for an hour or so. Until it has approx doubled in size.

Then punch down and place on floured surface. Knead for a few minutes.

For Pizzas, divide into 2 and roll out to pizza shape, top with desired topings and bake for approx 15mins.

For Pizza Pockets roll into log shape and cut into 12 or so balls. Then roll into small circles. Fill with choice of filling join edges and bake for about 10 – 12 mins turning once.

I have used Spag bol sauce with a pinch of grated cheese. You only need about a desert spoon of sauce for each. Be careful though, these can be a bit messy, they tend to ooze out of the join.

Have also used a smear of tom sauce or paste with some shredded ham and grated cheese… these were yummy.

Basically you could pop anything you like in them, just try not to make the mixture inside to ‘runny’, and don’t over fill.

When they are cool I wrap each one in glad wrap, but them all in one big zip lock bag in the freezer and they are on hand as a snack that just need to be put in the microwave for a minute or two, or thawed out and eaten cold.
