Chicken Parmigiana
For dinner tonight we are having Chicken Parmigiana and veggies. I am not following a recipe as such, well at all really…lol. Just making it up as I go along. This is what I am doing.
Sauce
1/4 small onion finely diced
1tsp minced garlic
3/4 cup diced bacon
1 sml tin diced tomatoes
1tsp sugar
salt & pepper to taste
Fry onion and garlic in some butter, add the bacon and fry for a few minutes. Add tin of tomatoes, sugar, salt & pepper. Reduce heat and simmer for 5 – 10 mins.
Chicken
Thinly sliced chicken breast (I have used roughly a double fillet to do 3 adults & 2 children)
Dip in beaten egg
Then roll in crushed cornflakes
Oven bake for approx 10 – 15mins each side.
Top with sauce & slices of cheese and pop under grill until cheese is melted and browned to desired colour.
